11 ounce is a measure of the weight of the fabric. I don't know the details of how they arrive at that number, but the higher the number the heavier the fabric is. 11-ounce is pretty heavy.
Ouch. I painfully recall stiff jeans. UGH. I had a pair, and never wore them until I washed them for several months. You couldn't walk down the steps with jeans that stiff. I had a pair of Jordache jeans that were dark and stiff like... like a... I don't know what!
