Oh yes, pimento cheese sandwiches were a school lunch staple. It is basically cheddar cheese, mayonnaise, pimentos (red chili peppers) and some spices. Spread on wonderbread, cut off the crusts and pack in Charlie's Angels lunchbox.
The packaged grocery store versions are usually pretty mild. Pimentos are more of a sweet pepper than a hot one. But it is a pepper and many of the recipes I've seen call for horseradish and hot sauce to be added to the mixture. If you ever find yourself in the Southern US and order a pimento cheese sandwich at a little cafe, ask first.
