That sounds pretty good. I make something similar that I call "Egg Bake," and I make it with eggs, veggies, cheese, and sometimes bacon or sausage and bake it in the oven. It's like a huge fluffy omelette.

Now why on earth would you remove the bacon fat from the pan in order to add oil to fry the onion in? Fry it in the yummy bacon fat!!!

Back then bacon fat was evil, and vegetable oil/margarine was good. I'm with you - this deserves bacon fat (and mushrooms).

Seconding the "leave the bacon fat in" thing. I love frying eggs in bacon fat, though I only have them very rarely.

Yep, I'd definitely eat this! And I'm another "Don't drain the bacon fat!" person, too. You know, I have all the ingredients for this in the fridge. I might try it tomorrow morning. *drool*
