I knew that nutrition class would be useful one day.

My favorite way to prepare carrots is also roasting. First, I steam them for a few minutes then mix with Yukon gold potatoes, sweet potatoes, red onions, minced garlic, parsley, and a drizzle of olive oil. I roast the whole kit and kaboodle at 350 for an hour, turning after 30 minutes. It is a great side dish and makes for happy vegetarians at the holidays: )

I was kind of amazed at the idea of pouring oil in with boiling veg - but when Chinese greens are cooked peanut or sesame oil is often added, sometimes heated to smoking point.

I wonder what kind of oil Wesson was/is?

Back then, it would have been cottonseed oil. Nowadays, Wesson's "vegetable oil" product is soybean oil. They also market canola oil, corn oil, and a canola/soybean blend.
