Some Southern friends taught me a variant some time ago. This is really really trashy, but tastes a lot better than you'd think from the ingredients, is blazing-fast to make, and looks very impressive:
1 can frozen juice concentrate (pink lemonade and limeade are both especially good, but whatever you like is fine; I think you want the smaller cans, not the huge ones), thawed a little 1 tub Cool Whip, thawed if frozen 1 regular pie crust, baked and cooled
Mix the can of juice with most of the Cool Whip. Put in the pie crust. Serve in wedges with a little dollop of Cool Whip on top. Keeps okay in the fridge for a day or so if you can't eat all of it at once.
i posted a similar recipe when i posted the rules to the contest!!!
lemonade pie:
6 oz frozen lemonade (can't find 6 oz cans anymore half to get 12 oz and cut in half) mostly thawed 1 pint vanilla ice cream, softened to mix 1 tub cool whip 1 graham cracker crust
mix first 3 ingredients and pour in crust, freeze at least 4 hours....very tart, creamy refreshing pie!!! can then store in fridge or keep in freezer and let thaw about 10-15 minutes before serving!
Oh my, you're right, I saw it a bit later! The ones my friends made didn't have ice cream in it though, just the frozen juice and cool whip, and a regular piecrust. I learned it from some starving Bible College marrieds, so likely that's why it's a lot humbler ;)
I've made dream pie too, but now I use real whipping cream, whipped, instead of the dream whip mix. I've made dream pies a lot for potlucks, and they're always gone in a flash!
