But I'm having a bit of trouble reconciling "Beef is healthy, beef is good for you, beef is great if you're trying to lose weight" with "Look at this slab of beef with a HUGE THICK CHUNK OF GLISTENING WHITE FAT wrapped around its edge".

IKR? The t-bone at the bottom is a far cry from the round steak they are talking about in the paragraph next to it.
