Now I'm dying to know how they managed to stuff protein, de-saturated fats, calcium and fiber in that white fluff.

And I'll bet that NASA, third world countries and different armies would like to know, too.

Well, wheat flour has protein, in fact bread flour has a lot more protein than cake flour or all purpoes flour. The protein become gluten, which give bread its distinctive texture. Granted, not a lot of protein, but it's there. You can use milk or butter in your bread recipe to take care of calcium and fats. (Did they know or care about saturated vs unsaturated fats back then?) And adding fiber is extremely simple -- there's all kinds of things you can grind up fine and add to bread to add fiber.

Of course, they only say everything you need is there, they don't talk about relative porportions, nor how many pounds of bread you'd need to eat each day to get, for example, the quantity of protein you need. And there is the problem of what we've learned since the 50's about what you need.

Dark bread can be healthy (fiber and vitamins), but I wonder how they managed with this bleached one. Maybe this is like that one brand that added wood pulp to the bread to heighten the fiber content while keeping the bread still white. (oh the things that I learn in this community...)

My uncle is famous, in the family, for having literally eaten nothing but white bread & mustard for 20 years of his life. He must've been eating Tip-Top!
