That's interesting. What technology didn't they have? They had canning, pasteurizing… but they didn't (I think) have vacuum-packaging, and they didn't have freeze-drying.
So, yes, in effect they were just grinding up coffee beans, pouring the grounds into cans, sealing them up as is and shipping them out. No wonder they got stale in a hurry!
[You've seen labels today that say, “Consume within x days of opening”? These were already “opened.” Jeepers, even potato chips today are bagged in argon gas to keep the potatoes from browning and going stale - I'd bet no one here knows that. That's not 'air' you're buying a bag of, it's chemically inert gas.]
