I don't know if "Yipeee!" is the exclamation I'd use if I saw this salad. Also, what exactly is "western" about it?

Having grown up in a household where Spam was an occasional treat and iceberg lettuce devoid of anything other than dressing was considered a salad, this actually looks pretty damn good to me.

It's "western" because of the ham/Spam and green pepper, like a western omelet, is my best guess. Not that it helps.

Once when I was pregnant, we were invited to my MIL's for dinner. Because my tummy was very iffy, I asked what we were having. "Ham, potatoes, and a green salad." I figured I was safe.

"Green salad" was lime jello with cottage cheese in it. That was the first time that meal that I threw up. lol

Not even Monty Python came up with THIS concoction...

"Spam and eggs, spam and sausages, spam and spam, spam, spam, spam spam spam LOVERLY SPAAAAAM"...

The UK have (what HAS to be a pisstake) advert called "spam up" - for a special treat (anniversary meal). If my husband served me spam because it was our anniversary, I'd be very concerned divorce was around the corner.

is your mil from minnesota, perhaps? i went to college in northern iowa, and know a lot of minnesotans. a minnesotan "salad" is usually jello (often lime) with fruit and dairy product (usually whipped cream, but i've had cottage cheese too). i don't know the etymology of them calling it a "salad" other than the fact it is served as a side dish to a meal instead of as a dessert.

of course, i've always liked them, so you can take my opinion with a grain of salt.
