Oh yes, pimento cheese sandwiches were a school lunch staple. It is basically cheddar cheese, mayonnaise, pimentos (red chili peppers) and some spices. Spread on wonderbread, cut off the crusts and pack in Charlie's Angels lunchbox.

Kraft still makes something like this, including the reusable glass packaging. We used these for juice glasses when I as growing up. My mom used to mix Kraft Old English cheese spread (http://www.kraftfoods.com/kf/Products/ProductInfoDisplay.htm?SiteId=1&Product=2100061250) with canned crab, spread it on English muffins, and grill it for a fancy luncheon dish. It's actually quite delicious.

Since I moved to North Carolina about a year & a half ago, I cannot find a decent fresh salsa, but I can find 6 different brands of pimento cheese spread.

Apparently it's still pretty popular here.

I just posted a recipe for Pimento Cheese Spread a little while ago. It's not locked it you want to copy it.

I see you're in Concord, NC. I'm from near there--went to HS in Monroe and college at Pfeiffer, just up the road.

And I adore pimiento cheese. My mom's home-made pimiento cheese. I've never found commercially produced stuff that was any good.

Your recipe looks tasty. I have added it too my "to-try" collection.
Thanks: )

And now you're in New York? Lately here it's been the other way round. Everybody moving here.

I seem to remember having the Kraft brand as a child in California, but that was probably 35 years ago? I can't remember if it was foul or not. :-)

My mom used to eat that crap. It smelled funny.

What about the spice factor? (I'm Ukranian. Even mild salsa makes me see red)

the prequel to Welch's jelly glasses?

I think that still exists in some form and my grandma still buys it.

[identity profile] lostchaos.livejournal.com 2008-03-03 12:18 am (UTC)(link)
The packaged grocery store versions are usually pretty mild. Pimentos are more of a sweet pepper than a hot one. But it is a pepper and many of the recipes I've seen call for horseradish and hot sauce to be added to the mixture. If you ever find yourself in the Southern US and order a pimento cheese sandwich at a little cafe, ask first.

Worry about the salt, no heat.
